This is a new fall recipe for a crowd that is super easy to throw together. It is a great make-ahead autumn holiday side dish to take on-the-go to your relative's home or when you want an easy entertaining recipe for your gathering. Kids love it too!

Creamy Corn Pudding
Serves 6-8

1 – 14.75 oz. can corn, drained
1 – 14.75 oz. can creamed corn
2 extra large eggs, beaten
1 -8 oz. pkg. corn muffin mix
½ cup butter or margarine, melted (1 stick)
½ cup light sour cream
½ cup low-fat ricotta cheese
½ teaspoon salt
Freshly ground pepper, to taste
1 cup sharp cheddar cheese, grated
Cooking spray

Pre-heat oven to 350 degrees. Spray 9 x 13” casserole or baking pan with cooking spray. In a medium bowl, mix all ingredients together except for cheese. Pour into pan and bake for 20-30 minutes. Sprinkle cheese on top and bake 10-15 minutes more or until butter knife inserted in casserole comes out clean.

This sounds like it would taste wonderful. Reminds me how much I like the hush puppies served with many dishes when we visit North Carolina.

Want to let your readers know that I've reviewed this book and it's an excellent holiday gift for first time entertainers, but the recipe and party ideas will be helpful to experienced entertainers as well.

All my best,

Cheryl
