Mom's Lasagna

 Love, love, love this recipe. And good news, it freezes great too!

Ingredients:

1 lb. hamburger
1 medium onion, chopped
Garlic salt
Pepper
Lasagna noodles
2 cans tomato soup
2 cans cheddar cheese soup
1 large can tomato paste
Mozzarella and cheddar cheese

Directions:

Fry hamburger with onion and garlic salt. Mix together soups and tomato paste. Spray a 13x9 pan. Layer noodles, hamburger, cheese then sauce. Repeat layers, ending with sauce. Top with cheese. 

Bake at 350 degrees for 45 minutes covered. Uncover and bake for an additional 15 minutes more or until cheese is melted


Note:

I usually double this recipe and freeze one. You don't even have to cook the noodles if you get the flat lasagna noodles - it always turns out great. 

Nana's Burger Bundles

 Who doesn't remember these? I haven't had them in years but love them. Might be time to make them again soon!

Ingredients:

1 box stove top stuffing, prepared
2 lbs. ground beef
1/3 cup evaporated milk
1 can cream of mushroom soup
2 Tbsp. ketchup
2 Tbsp. Worcestershire sauce

Directions:

Mix ground beef with evaporated milk. Form into patties. Put 1/4 cup stuffing inside each patty and close into a ball. Mix soup, ketchup and Worcestershire sauce. Pour over bundles and bake at 350 degrees for 45 minutes. 

Easy Cheesy Lemon Bars (Mom's)

 As simple as these are they could possibly be my favorite dessert. Mom knew her stuff!

Ingredients:

1 lemon cake mix

1 stick butter, melted

3 eggs

1 can lemon frosting

8 ozs. cream cheese

Directions:

Mix cake mix, butter and one egg in a bowl. Pres into the bottom of a 13x9 pan. Mix together frosting and cream cheese. Take out 1 good sized cup for frosting. To the remaining frosting add 2 eggs and beat. Spread over the crust and bake at 350 degrees for 40 minutes. 

Let cool and frost. 

Hearty Broccoli Dip

This is a favorite of ours - you could probably even eat it as a chowder/soup but we usually use it for dipping tortilla chips in. 

Ingredients: 

1 lb. ground beef, browned and drained 
1 lb. Velveeta/Cheez Whiz 
1 can cream of mushroom soup 
10 ozs. broccoli florets, thawed 
12 ozs. salsa Tortilla chips

Directions: 

Transfer all ingredients to a slow cooker (except tortilla chips). Cover and cook on low for 3-4 hours stirring often.

Broccoli Delight

This is the version that you see in a lot of delis in grocery stores. It is really good and with all the veggies it isn't the most unhealthy thing you will eat. 

Ingredients:

1 lb. medium cheddar cheese, cubed 
1 1/2 lbs. broccoli, chopped 
1 lb. cauliflower, chopped 
1 lb. bacon, cooked and crumbled 
1 onion, diced 2 tomatoes, diced 
1 jar of Miracle Whip 
1/4 cup sugar 
1/4 cup lemon juice 

Directions:

 Combine Miracle Whip, sugar, and lemon juice. Combine it with all the other ingredients. Chill.

Banana Spice Cake





This was one of my Nana's favorite recipes using leftover bananas. Unfortunately there is no way to make this one 'healthy' so I won't list the points. If you want to see her other recipe it is Chocolate Banana Cake - not sure I could pick a favorite! 

Ingredients: 

2 or 3 bananas =1 cup 
1 tsp. lemon  
2 1/4 cups sifted flour 
2 tsp. baking powder 
1/2 tsp. baking soda 
1 tsp. salt 
1 1/2 cups sugar 
1 tsp. cinnamon 
1/2 tsp. nutmeg 
1/2 cup shortening 
2/3 cup sour (1 tsp. vinegar to regular milk) 
2 eggs 
1 tsp. vanilla 
1/2 cup nuts 

Sift flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside. Cream together the shortening and sugar. Add eggs one at a time beating well after each. Add lemon juice, sour milk, and vanilla and beat well. Alternate between adding the bananas and dry ingredients until well blended. Grease and flour a 13x9" pan. Add the banana mixture and bake at 350 degrees for 25-30 minutes or until done.

*Feel free to either dust the top with powdered sugar or frost with cream cheese frosting

Kielbasa Casserole



iTrackBites Better Balance - 5 Bites per serving


I got this recipe from my mom and it is a nice casserole with excellent flavor. 

Ingredients:

13 ozs. turkey kielbasa, cut into 1/2" slices 
1 large onion, chopped 
1 pkg. au gratin potatoes 
2 1/2 cups hot water
4 medium carrots cut into matchsticks 
1 pkg. (10 ozs) frozen chopped broccoli, thawed and drained 
3 ozs reduced fat shredded cheddar cheese 


Drizzle a large pan with a little oil and cook sausage and onion until onion is tender, about 5 minutes. Stir in potatoes, sauce mix, and water. Heat until boiling; reduce heat. Simmer 10 minutes stirring occasionally. Stir in carrots; cover and simmer until carrots are crisp-tender, about 10 minutes. Stir in broccoli and cheese; cook and cover until cheese is melted about 5-10 minutes. 

Serves 4-5
